best pancakes EVER

This morning we made pancakes.  It’s become a common event on weekends to make pancakes at some point (yes, even for dinner once in a while).  The kids love to help dad make them.  Once you try them, you’ll never go back.

This recipe has been adapted from The King Arthur Flour 200th Anniversary Cookbook.

In the first bowl combine:
2 cups flour (all All-Purpose flour or a 50:50 mixture of AP and wheat flour)
2 tbsp. granulated sugar
1.5 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda

In a second bowl combine:
2 large eggs
2 cups buttermilk
1/2 stick (4 tbsp.) melted. unsalted butter

Blend the wet ingredients into the dry for about 20 seconds.  Be gentle.

Cook pancakes on a griddle at 375 degrees F.  When bubbles start forming, flip and cook on the other side.

Serve them with fruit and whipped cream or your favorite syrup.  Today we had it with bananas and apple syrup (which is a mixture of boiled cider and sugar).  YUM!

Oh, yeah, and it snowed here again – eight more inches!

  1. The pancakes look great, but the snow looks AMAZING! I will take the snow please! It will be wet where I am in SC all year except for the days that are cold enough to snow, those days are almost always sunny….
