Here’s one of my husband’s favorite quick breads:  Pumpkin Bread!

Preheat oven to 350 degrees F.

Combine the following into a bowl and mix until smooth:

1.5 cups granulated sugar
1 cup canned pumpkin puree
2 large eggs
1/2 cup canola oil

Set aside.

In another bowl, whisk together:

1 3/4 cups flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. nutmeg

Combine the ingredients of both bowls, folding the flour mixture into the wet ingredients, making sure not to over mix the batter.

Pour into a pre-greased 9″x5″ loaf pan and bake for 60 – 70 minutes until a toothpick inserted into the center is clean.  Let sit for 10 min.  Enjoy!!
